What each ingredient does

Round steak
Provides the meat that becomes tender during long, slow braising.
Guinness
Adds liquid and a malty, bitter depth that flavours the braising sauce.
White onion
Softens and turns sweet as it cooks, building the base flavour of the sauce.
Fresh mushrooms
Release moisture and savoury, umami flavour into the braising liquid.
Olive oil
Carries heat for browning the steak and sautéing the vegetables, adding fat for flavour.
Orange peel
Adds bright citrus aroma that balances the rich, dark beer.

The step that matters

Browning the steak quickly over medium-high heat. Searing creates browned flavour through the Maillard reaction. Crowding the pan or cooking too long steams the meat instead, leaving it grey and less flavourful.

Swap the orange

How well each one fits the dish's main ingredients (olive, mushroom, onion, thyme, pepper):

  1. Limefits better
  2. Lemonfits better
  3. Avocadofits better
  4. Orangethe original
