Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and give the cake its rich, tender crumb.
Eggs
Add structure and richness as they set during baking, binding the batter.
All-purpose flour
Forms the cake's main structure as its proteins set during baking.
White sugar
Creamed with butter to aerate the batter and adds sweetness and tenderness.
Baking powder
Releases gas in the batter to help the cake rise.
Milk
Adds moisture and loosens the batter so it blends smoothly with the flour.

The step that matters

Creaming butter and sugar. Beating butter and sugar until light and fluffy traps air bubbles that expand in the oven and help lift the cake. Under-creaming leaves a dense, heavy texture.
