What each ingredient does

Long-grain white rice or basmati rice
Absorbs the broth as it simmers, forming the body of the dish.
Chicken broth
Supplies the cooking liquid that the rice absorbs and softens in.
Black beans
Add protein-rich body and a firm, earthy texture to the rice.
Onion
Softens and sweetens as it sautés, building a savory base.
Red, yellow, and green pepper
Add sweetness, color, and a little crunch against the soft rice.

The step that matters

Simmer covered without lifting the lid. Lifting the lid releases steam and heat, so the rice may cook unevenly or stay firm. Keeping it covered holds the steam that cooks the grains through while the liquid is absorbed.

Swap the clove
