Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set during baking.
All purpose white flour
Forms the gluten and starch framework that gives the muffins their structure.
Sugar
Adds sweetness and helps the tops brown during baking.
Canola oil
Adds fat for a moist, tender crumb.
Baking soda
Reacts with acidity in the batter to produce gas that helps the muffins rise.
Raw apple
Adds moisture and fruity flavor, softening as the muffins bake.

The step that matters

Stirring flour mixture into egg mixture. Mixing only until the flour is combined keeps gluten development limited, so the muffins stay tender rather than tough and dense.
