Ingredients

Directions

Prepare the fish

  1. Thaw fish if frozen.

  2. Rinse fish and pat dry.

  3. Measure thickness of fish and set fish aside.

Cook the potatoes

  1. Cook potatoes in a covered small saucepan in enough boiling salted water until tender, about 15 minutes.

  2. Drain potatoes and let cool.

Season and grill the fish

  1. In a small bowl, combine chipotle chile pepper, sugar, and ¼ teaspoon salt.

  2. Rub the chile pepper mixture into the fish.

  3. For a charcoal grill, grill fish on a greased rack over medium coals for 4–6 minutes per ½‑inch thickness or until flakes easily, turning after half the time.

  4. For a gas grill, preheat grill, reduce heat to medium, place fish on a greased grill rack over heat, cover and grill as above.

  5. Cool fish slightly and break fish into chunks.

Assemble and serve

  1. In a medium bowl, combine salsa, lime juice, and remaining salt.

  2. Add potatoes, fish, green onion, and cilantro; toss gently to coat.

  3. Divide fish mixture among tortillas.

  4. Top each tortilla with sour cream and fold.

  5. Serve with lime wedges.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon fillets
Provides the main protein, which flakes into tender pieces when grilled.
Potatoes
Adds bulk and a soft, starchy texture that holds the filling together.
Lime juice
Adds acidity that brightens the salsa and balances the rich fish.
Sour cream
Adds fat and creaminess that softens the chile heat.
Chipotle chile pepper
Adds smoky heat that seasons the fish as it grills.

The step that matters

Grilling the fish until it flakes. Fish cooks quickly and turns dry and tough past doneness. Checking for easy flaking, rather than relying only on time, keeps the flesh moist. Thickness sets the timing, so measure first.

Swap the onion

How well each one fits the dish's main ingredients (salmon, potato, pepper, sugar, lime, corn, cream):

  1. Capsicumfits better
  2. Chivefits better
