Why it works: Garlic and onion match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓

Ingredients
Directions
Prepare the beans
Wash the beans in a strainer with running water until the water runs clear. Place them in a large pot with 4 cups of water, 1 tbsp salt, thyme, and half of the green pepper.
Bring to a boil over a strong flame, reduce the flame, and let it boil for 3 hours or until the beans are tender. Add more water if it evaporates. Strain the cooked beans and set the water aside to boil the rice.
Make the sofrito
Remove 1 tbsp of beans and mash them in a mortar until you get a fine paste. In a large pan with oil, fry the pork until it is crispy and has released all the fat.
Remove the pork with a skimmer and drain it on paper towels. Set it aside and fry the garlic in the pan along with the remaining green pepper, the chili, and the onion for 5 minutes while stirring constantly.
Add the mashed beans, the remaining beans, and the pork. Reduce the flame and simmer uncovered for 10 minutes.
Cook the rice and serve
Place all these ingredients in the pot with the bean water and add the rice, 1 1/4 tbsp salt, and black pepper.
Bring everything to a boil, stirring constantly, and let it boil for 20 minutes or until the rice is cooked and the liquid has boiled dry. Adjust the salt. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Black beans
- Provide the main body and creamy texture, and their cooking water flavors the rice.
- Rice
- Absorbs the bean liquid as it cooks, setting the final texture of the dish.
- Pork
- Adds fat and savory flavor, with crisped bits contributing browned richness.
- Onions
- Soften and sweeten as they fry, building the aromatic base.
- Garlic
- Adds pungent aroma that mellows during frying.
The step that matters
Boiling the rice in the bean liquid. Stirring constantly and watching the liquid keeps rice from sticking and scorching on the bottom. Cooking until the liquid has boiled dry lets the rice absorb the seasoned liquid evenly, so the texture is set properly.
