Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
BBQ Chicken and Cheddar Foil Packet Dinner
Ingredients
Directions
Prepare the packets
Preheat oven to 375°F.
Place a foil sheet, approximately 12 x 12 inches, on a work surface.
Spoon about 1 teaspoon of the barbecue sauce in the center of the foil sheet.
Place one chicken breast half over the barbecue sauce and spread another teaspoon of sauce over the chicken.
Top with a quarter of the potato, bell pepper, and onion.
Sprinkle with a little salt and pepper.
Fold the foil in half to cover the contents; make narrow folds along the edges to seal.
Repeat with the remaining ingredients to assemble three more packets.
Bake and finish
Place the packets on a baking sheet and bake for 35 minutes.
Open the foil packets with scissors and carefully pull back the edges (contents may be very hot).
Sprinkle a quarter of the cheese over the top of each chicken breast half and return the packets to the oven, unsealed, for 2 minutes or until the cheese is melted.
With a spatula, transfer the contents of each packet onto individual serving plates, if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken breast
- Provides the lean protein that becomes firm and cooked through during steaming in the sealed foil.
- Red potatoes
- Thin slices soften in the trapped steam and absorb cooking juices, adding starch and body.
- Barbecue sauce
- Sugars caramelise lightly in the oven and flavour the chicken and vegetables as they steam.
- Cheddar cheese
- Melts over the hot contents in the final minutes, adding richness and a creamy, binding texture.
- Bell pepper
- Softens in the steam while keeping some fresh, sweet flavour and colour.
The step that matters
Sealing the foil folds. Narrow, tight folds trap steam so the chicken cooks in its own moisture. Loose seams let steam escape, which can leave the chicken dry and the potatoes undercooked.
Swap the onion
How well each one fits the dish's main ingredients (sauce, chicken, potato, pepper, cheddar cheese):
- Capsicumfits better
- Tomatofits about as well
- Onionthe original
- Mustardfits about as well
Fit is the average pairing score against sauce, chicken, potato, pepper, cheddar cheese. Candidates are from the same food group and used in at least 100 recipes.
