Ingredients

Directions

Prepare the chicken

  1. In a small bowl, combine feta cheese and cream cheese, then set aside.

  2. Using a sharp knife, cut a horizontal slit through the thickest portion of each chicken breast half to form a pocket.

  3. Stuff pockets with the cheese mixture.

  4. If necessary, secure openings with wooden toothpicks.

  5. Sprinkle chicken with pepper and salt.

Cook the chicken and spinach

  1. In a large nonstick skillet, cook chicken in hot oil over medium-high heat about 12 minutes or until tender and no longer pink, turning once.

  2. Remove chicken from skillet, then cover and keep warm.

  3. Add chicken broth to skillet and bring to a boil.

  4. Add half of the spinach. Cover and cook 3 minutes.

  5. Remove spinach from skillet, reserving liquid in pan.

  6. Repeat with remaining spinach.

  7. Return all spinach to skillet.

  8. Stir in the nuts and lemon juice.

Serve

  1. To serve, divide spinach mixture among 4 dinner plates.

  2. Top with chicken breasts and garnish with lemon slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Feta cheese
Melts into the stuffing, adding salty, tangy flavor and a creamy filling.
Cream cheese
Keeps the filling soft and creamy so it blends with the feta rather than crumbling out.
Chicken breast
Provides the lean protein base that the cheese filling is tucked into.
Spinach
Wilts in the broth to form a tender green bed for the chicken.
Pecan pieces
Add toasted, nutty crunch and a rich aroma to the spinach.
Lemon juice
Adds acidity that brightens the spinach and balances the rich cheese.

The step that matters

Cooking the chicken until no longer pink. Chicken must reach a safe internal doneness; a thick stuffed breast can look cooked outside while the centre stays underdone. Cooking over medium-high heat and turning once helps it cook through evenly.

Swap the spinach

How well each one fits the dish's main ingredients (basil, tomato, feta cheese, cream cheese, chicken, pepper, olive):
