Why it works: Vanilla and cherry match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 890 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓
Famous Dave's Pineapple Upside-down Cake
Ingredients
Directions
Prepare the topping
Preheat oven to 350°F.
Mix brown sugar and ⅓ cup butter in a bowl. Stir in 1 teaspoon vanilla and cinnamon.
Spread evenly over the bottom of an ungreased 9" cast iron skillet or a 9" x 9" baking pan. Heat until the brown sugar melts.
Arrange pineapple slices over the brown sugar mixture. Place a cherry half in the middle of each slice.
Make the batter
Beat egg yolks in a mixer bowl until thickened. Gradually add ½ cup sugar, beating constantly until blended.
Mix flour, baking powder and salt together in a large mixing bowl. Add shortening, ¼ cup butter, pineapple juice, half and half, buttermilk and 1 teaspoon vanilla. Beat until blended, scraping the bowl occasionally.
Mix in egg yolk mixture. Fold in stiffly beaten egg whites. Spoon the batter into the prepared skillet.
Bake and serve
Bake for 35 – 40 minutes or until a cake tester comes out clean.
Invert the skillet onto a serving platter, allowing the skillet to rest on the cake for several minutes before removing.

What each ingredient does
- Butter
- Adds richness and moisture, and helps the brown sugar topping form a glossy caramel layer.
- Egg whites
- Whipped to stiff peaks, they lighten the batter and give the cake an airy, open structure.
- Egg yolks
- Add richness, tenderness and emulsifying fat that helps the batter hold together.
- Flour
- Forms the cake's structure once it sets in the oven.
- Baking powder
- Releases gas in the heated batter, helping the cake rise and turn light.
- Brown sugar
- Melts into a caramel topping and adds moisture and molasses flavour.
The step that matters
Invert the skillet while the cake is warm. Caramel sets as it cools and can stick to the pan. Resting briefly lets the cake firm slightly so the topping releases cleanly when inverted.
