What each ingredient does

New potatoes
Provide the starchy base that holds the salad's body and texture.
Olive oil
Adds fat and coats the potatoes, carrying flavor and keeping them moist.
Vinegar
Adds acidity that brightens the dressing and balances the oil.
Garlic
Adds sharp aromatic flavor to the dressing.

The step that matters

Cook potatoes until just tender. Overcooked potatoes break apart and turn mushy, while undercooked ones stay hard. Stopping at tender keeps their shape so they hold up when tossed with the dressing.

Swap the clove

How well each one fits the dish's main ingredients (potato, parsley, olive, vinegar, garlic):

  1. Thymefits better
  2. Dillfits better
