What each ingredient does

Eggs
Bind the breadcrumb coating to the fish and help it brown and crisp.
All purpose flour
Dry the fish surface so the egg wash and breadcrumbs adhere evenly.
Fresh breadcrumbs
Form a crisp, golden crust that protects the delicate fish while it fries.
John dory fillets
Provide the mild, flaky white fish that is cooked through in the pan.
Extra virgin olive oil
Conducts heat for frying and helps the breadcrumb coating turn golden brown.

The step that matters

Frying the coated fillets. Oil must be hot enough to brown the crumb quickly; if it is too cool the coating absorbs oil and turns greasy, while overcrowding drops the pan temperature and steams the coating instead of crisping it. Cooking in batches keeps the fish moist and evenly cooked.
