Why it works: Garlic and onion match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓
Indonesian Fried Rice
Ingredients
Directions
Make the egg topping
Beat the eggs in a bowl until foamy.
Add a little salt according to taste.
Heat a wok or frying pan and coat it with a little cooking oil to prevent sticking.
Make an omelet using a quarter of the mixed eggs. Cook both sides evenly.
Repeat the process for another three times until all the egg mixture is used.
Cut the cooked eggs into strips for topping the fried rice later.
Make the paste and fry
Process the onion, chili, garlic, sugar, and coriander in a food processor until it becomes a thick paste.
Heat a wok or frying pan and add 2 tablespoons of cooking oil.
Saute the paste until fragrant.
Add the steak and raw shrimps. Cook for a few minutes until the color changes.
Add the cooked rice and more cooking oil if necessary.
Add the sauces and scallions and continue frying for 30–60 seconds until fragrant.
Serve
Scoop from the wok into a plate and top with the omelet strips.
Serve while hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Set into thin omelets that give the dish a soft, savory topping.
- Cooked rice
- Forms the bulk of the dish and absorbs the seasoning and oil as it fries.
- Shrimps
- Add savory protein and sweetness that firm and turn opaque when cooked.
- Garlic
- Releases aromatic compounds when fried in oil, building the base flavor.
- Red chilies
- Provide heat and aroma once blended into the frying paste.
- Soy sauce
- Adds salty, savory depth and helps brown the rice as it fries.
The step that matters
Frying the paste until fragrant. Sauteing the paste slowly in oil cooks off raw, sharp notes and blooms the aromatics. Stopping too early leaves a harsh, raw taste in the dish.
Swap the clove
How well each one fits the dish's main ingredients (rice, egg, shrimp, garlic, onion, coriander, sugar):

Fit is the average pairing score against rice, egg, shrimp, garlic, onion, coriander, sugar. Candidates are from the same food group and used in at least 100 recipes.
