Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Directions

Prepare

  1. Butter the casserole dish.

Layer and bake

  1. Layer thin slices of Yukon Gold potatoes in the dish.

  2. Sprinkle each potato layer with salt, pepper, parsley, and a light amount of Asiago cheese, and add a few sliced Portobello mushrooms.

  3. Repeat steps 2–3 until you have about four layers.

  4. Pour about 3/4 cup of half and half or cream over the top layer and spread evenly.

  5. Cover loosely with foil and bake at 400°F for 45 minutes.

  6. Remove the foil and bake for an additional 10 minutes until the top is browned.

Check and rest

  1. Check doneness by poking with a knife; the blade should slide in easily but still show layer separation.

  2. Let the gratin rest for 15–30 minutes before serving.

What each ingredient does

Yukon gold potatoes
Form the bulk of the gratin and set into tender layers as they cook.
Portobello mushroom caps
Add savory, meaty flavor and moisture to the layers.
Hard cheese such as parmesan or asiago
Adds salty, savory flavor and helps the top brown.
Half and half or cream
Adds fat and moisture that turns the layers silky as they bake.

The step that matters

Checking doneness with a knife. The blade should slide in easily through the potatoes while the layers still hold their shape. Cooking too long lets the potatoes break down and the cream separate, while undercooked potato stays firm in the center.

Swap the parsley

How well each one fits the dish's main ingredients (potato, mushroom, cheese, cream, pepper):

  1. Thymefits better
  2. Garlicfits better
  3. Celeryfits about as well
  4. Parsleythe original

Fit is the average pairing score against potato, mushroom, cheese, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
