What each ingredient does

Onions
Soften and sweeten as they cook down into the sauce base.
Olive oil
Carries the heat and softens the vegetables while adding richness.
Tomatoes
Form the liquid base of the stew and add acidity and body.
Zucchini
Softens during simmering and adds moisture and bulk to the stew.
Chorizos
Release their fat and spice into the stew and are sliced as a topping.
Hard-boiled eggs
Add a mild, creamy texture as a topping.

The step that matters

Simmer the vegetables gently. Moderately low heat and occasional stirring let the vegetables soften and release their juices slowly, so the stew thickens evenly without scorching on the bottom of the pan.
