Potato Chips
Ingredients
Directions
Prepare the potatoes
Pour the vegetable oil into a plastic bag and add the potato slices, shaking to coat.
Microwave the chips
Coat a large dinner plate lightly with oil or cooking spray, then arrange the potato slices in a single layer on the dish.
Cook in the microwave for 3 to 5 minutes, or until lightly browned; times vary with microwave power.
Remove the chips from the plate, toss with salt (or other seasonings), and let cool.
Repeat the process with the remaining potato slices; no need to re-oil the plate.

What each ingredient does
- Potato
- Starch that dries and crisps into the chip's crunchy texture as it cooks.
- Vegetable oil
- Coats the slices so they brown evenly and crisp rather than dry out.
The step that matters
Arrange the slices in a single layer. Slices touching or stacked trap steam, so they cook soft instead of crisp. A single layer lets moisture escape so the chips brown and crisp evenly.
