Ingredients

Directions

Poach the chicken

  1. Combine wine, salt, peppercorns, lemon juice, and thyme in a large saucepan.

  2. Add the chicken breasts and enough water to cover them.

  3. Bring the liquid to a boil, reduce the heat, and simmer for 10 minutes.

  4. Remove from the heat and let the chicken cool in the liquid.

  5. When the chicken is cool enough to handle, remove it from the liquid and discard the liquid.

Make the filling

  1. In a large bowl, mix the sour cream, apples, celery, red onion, and parsley together.

  2. Cut the chicken into small pieces, add it to the sour cream mixture, and toss.

  3. Season to taste with salt and pepper, and stir in the walnuts.

  4. Refrigerate until ready to serve.

Assemble and serve

  1. Lay the tortillas out and divide the chicken mixture among them, spreading it in the center.

  2. Divide the shredded lettuce among the tortillas and tightly roll each into a cylinder, seam side down.

  3. Cut the wraps in half on the diagonal and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken breasts
Provide the main protein, becoming tender and moist when gently simmered in liquid.
Apples
Add crisp texture and a touch of sweetness that balances the savory filling.
Sour cream
Binds the filling and adds creamy moisture without heavy fat.
Walnuts
Add crunch and a toasty, nutty aroma to the filling.
Celery
Adds crisp texture and a fresh, mildly vegetal crunch.
Flour tortillas
Form the wrapper that holds the filling together when rolled.

The step that matters

Simmer the chicken gently. Keeping the liquid at a low simmer after the boil cooks the chicken evenly and keeps it tender; a hard boil toughens the proteins and dries the meat.

Swap the apple

How well each one fits the dish's main ingredients (white wine, lemon, thyme, chicken, cream, celery, onion):

  1. Limefits better
  2. Avocadofits better
  3. Orangefits better
  4. Applethe original

Fit is the average pairing score against white wine, lemon, thyme, chicken, cream, celery, onion. Candidates are from the same food group and used in at least 100 recipes.
