What each ingredient does

Chicken wings
Provide the main protein, which becomes crisp and juicy when fried.
Cornstarch
Forms a thin coating that fries up crisp and golden on the wings.
Margarine
Adds fat to the sauce, giving it richness and a smooth, glossy texture.
Banana ketchup
Adds sweetness and body to the sauce, helping it cling to the wings.
Hot sauce
Adds acidity and heat to the sauce.
Calamansi juice
Adds citrus acidity that brightens the marinade and the sauce.

The step that matters

Coat the wings with cornstarch before frying. A dry, even starch coating helps the skin crisp and brown. Wet or uneven coating can make the wings soggy or cause the coating to clump and fall off in the oil.

Swap the banana

How well each one fits the dish's main ingredients (chicken, onion, garlic, sauce, ketchup, pepper, parsley):

  1. Limefits better
  2. Lemonfits better
  3. Avocadofits better
  4. Bananathe original

Fit is the average pairing score against chicken, onion, garlic, sauce, ketchup, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
