Ingredients

Directions

Prepare the meringue discs

  1. Preheat oven to 300°F. Grease and flour cookie sheets; set aside.

  2. Grease and flour several 3‑inch round molds.

  3. Combine flour and cashews in a food processor with the blade attachment; process until the nuts are finely chopped; set aside.

  4. Beat the egg whites on high speed in an electric mixer with the whisk attachment until stiff but not dry.

  5. Gradually add sugar, 1 tablespoon at a time, mixing in the flour‑nut mixture gradually.

  6. Arrange the round molds on the prepared cookie sheet; pipe or spread the mixture into the molds using an offset spatula.

  7. Bake for 15 minutes or until lightly golden brown; remove from the oven and let cool for 30 minutes before removing from the molds; set aside.

  8. Repeat with remaining ingredients to make about 40 meringue discs.

Make the buttercream

  1. Place 20 meringue discs and any broken discs in a food processor with the blade attachment; process to make crumbs.

  2. Transfer the crumbs to a shallow bowl and set aside.

  3. Combine sugar and water in a saucepan; boil until the syrup reaches 238°F.

  4. Meanwhile, combine the egg yolks and whole egg in an electric mixer with the paddle attachment.

  5. Whip on high speed for about 10 minutes until the mixture forms a ribbon pattern when the paddle is lifted; the mixture should be pale yellow; add salt.

  6. When the syrup reaches 238°F, carefully pour it into the egg mixture in a slow, steady stream while whipping continuously on high speed until the mixture cools and the bowl is cool to the touch.

  7. Lower the mixer’s speed to medium; gradually add butter, 1 cube at a time.

  8. If the mixture looks broken and curdled, whip a little longer until it comes together; once smooth, add vanilla extract.

Assemble and serve

  1. Spread 1–2 tablespoons of buttercream on one side of a meringue disc; cover with another disc to form a sandwich.

  2. Spread buttercream all over the sandwich, covering all surfaces including the sides.

  3. Roll the Silvanas in meringue crumbs; refrigerate or freeze until the buttercream is firm; serve cold plain or with other desserts.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the meringue discs their airy structure.
Cashews
Finely ground nuts add body and a nutty flavour to the meringue discs.
Butter
Softened butter whipped into the yolk syrup mixture gives the buttercream its rich, smooth texture.
Egg yolks
Yolks cooked with hot syrup and whipped help thicken and enrich the buttercream.
Sugar
Sweetens the meringue and, boiled to syrup, stabilises the buttercream.

The step that matters

Pouring the hot syrup into the eggs. The syrup must reach 238°F and be poured slowly while whipping constantly. This cooks the eggs gently and cools the mixture, so the buttercream becomes smooth instead of curdled or grainy.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, egg, sugar, butter):
