Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the custard base as they heat, giving the ice cream body and richness.
Sweetened condensed milk
Adds sweetness and a dense, creamy body that keeps the texture smooth.
Heavy whipping cream
Supplies fat, which makes the ice cream rich and creamy and softens the bite.
Half-and-half
Adds moisture and milk fat, keeping the base smooth and less icy.
White sugar
Adds sweetness and lowers the freezing point, keeping the texture softer.
Vanilla extract
Provides the main aroma and flavor of the finished ice cream.

The step that matters

Simmering the custard base. Egg proteins thicken the base as it heats but can curdle or scramble if overheated. Constant stirring spreads the heat evenly and prevents scorching on the bottom of the pan.
