Skillet Chicken with Orzo

Time10 to 12 minutes

Ingredients

Directions

Prepare the chicken

  1. Trim the chicken thighs of excess skin and fat.

  2. Sprinkle both sides with a little salt.

  3. Heat olive oil and melt butter on medium high heat in a large skillet to coat the bottom of the pan.

  4. When the oil is hot, pat the chicken pieces dry on both sides with paper towels.

  5. Place the chicken pieces skin‑side down in the pan.

  6. Let cook for 5 minutes or until the chicken has browned on one side.

  7. Turn the chicken pieces over and cook for another 4 minutes until lightly browned.

  8. Remove the chicken from the pan, set aside.

Make the orzo base

  1. Add the orzo pasta to the pan.

  2. Stir to coat with drippings, and let the pasta brown.

  3. Once the orzo starts to brown, stir in the chopped onions.

  4. Reduce the heat to medium and let cook, stirring often for 2 to 3 minutes until the onions begin to soften.

  5. Add the minced garlic and cook a half minute more.

  6. Stir together the chicken stock, tomatoes, lemon juice, salt, pepper in a large measuring cup.

  7. Pour stock mixture over orzo.

Cook and serve

  1. Place the chicken pieces skin‑side up, on top of the orzo.

  2. Lower the heat to the lowest heat you need to maintain a bare simmer.

  3. Cover and let cook until the orzo has completely absorbed the liquid and the chicken is cooked through, about 10 to 12 minutes.

  4. Remove from heat and let sit for 5 minutes before serving.

  5. Garnish with fresh chopped parsley, olives, coriander and cherry tomatoes.

What each ingredient does

Chicken thighs
Provide the main protein, with browned skin adding savoury flavour and rich texture.
Orzo pasta
Absorbs the stock and tomato liquid, becoming tender and giving the dish its body.
Crushed tomatoes
Add acidity and moisture that combine with the stock to form the cooking sauce.
Chicken stock
Supplies the liquid the orzo absorbs, adding savoury depth to the pasta.
Onion
Softens as it cooks, adding sweetness and aromatic base flavour.
Garlic
Adds aroma that builds the savoury base once cooked briefly in the pan.

The step that matters

Covered simmer until the orzo absorbs the liquid. Keeping the heat low to a bare simmer lets the pasta cook evenly and absorb the stock without scorching on the bottom. Too much heat evaporates the liquid before the orzo is tender.
