Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Unsalted butter
Adds richness and tenderness, and helps give the crumb a soft texture.
Eggs
Provide structure as they set, and add moisture and richness to the crumb.
Caster sugar
Sweetens the cake and helps create a tender, lightly aerated crumb when beaten.
Plain flour
Forms the main structure of the cake as the batter sets in the oven.
Baking powder
Releases gas during baking, helping the cake rise and become light.
Milk
Adds moisture and helps the batter come together into a smooth, soft cake.

The step that matters

Turning the cake out of the pan. Greasing and flouring the pan and loosening the cake while still warm helps it release cleanly. Without this, the cake can stick and tear, because sugars and fats bond to the pan surface as the cake cools.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, egg, sugar, flour, milk):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against butter, egg, sugar, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
