What each ingredient does

Chicken
Slow cooking in broth makes the meat tender and gives the soup its savory body.
Chicken broth
Provides the liquid base that carries the flavor of the other ingredients.
Noodles
Absorb liquid as they cook, providing the soup's main starch and body.
Carrots
Add sweetness and color as they soften during the long cook.
Celery
Adds savory aroma and a tender, slightly crisp texture after cooking.
Onion
Releases sugars and aroma as it cooks, building the soup's flavor base.

The step that matters

Adding the noodles. Noodles cook quickly in hot liquid and keep absorbing broth, so they can turn mushy or soak up the soup if left too long. Check them near the end of the 30 minutes and add more broth if the soup thickens too much.
