Ingredients

Directions

Make the chili

  1. Fry the bacon over medium heat until it begins to get crispy.

  2. Add the chopped onions and fry over high heat, stirring often, until they begin to brown.

  3. Stir in the ground beef.

  4. Cook over high heat, stirring occasionally, until the beef is browned, a few minutes.

  5. When the beef is about halfway browned, stir in the chopped garlic.

  6. Once the beef is well browned, stir in the tomato sauce, molasses, and beef broth.

  7. Add all the spices except cayenne and stir well.

  8. Bring to a simmer and taste.

  9. Add salt or cayenne if needed.

  10. You can add more cayenne or chili powder if you like things spicy, but taste first before adding more.

  11. Cook the chili on a gentle simmer for at least 30 minutes before grilling the hot dogs.

  12. You can cook it several hours if desired, adding a little more beef broth here and there if the chili gets dry.

Grill and serve

  1. Grill the hot dogs over medium heat until they get a light char.

  2. Grill the hot dog buns briefly if desired, no more than a minute.

  3. You can paint the buns with olive oil or butter before grilling if desired.

  4. Place the hot dog in the bun, top with chili, sprinkle with chopped red onion and shredded cheese.

What each ingredient does

Bacon
Its fat renders out and crisps, flavouring the base of the chili.
Ground beef
Provides the meaty body and browned flavour that make up most of the chili.
Onion
Softens and browns, adding sweetness and savoury depth to the chili.
Tomato sauce
Adds liquid and acidity, forming the saucy body of the chili.
Molasses or honey
Adds sweetness that balances the acidity and spice of the chili.
Chili powder
Contributes warm, earthy chili flavour and heat to the sauce.

The step that matters

Cook the chili on a gentle simmer for at least 30 minutes. Simmering lets the spices bloom and blend with the meat and tomato, while the sauce thickens. Rushing this leaves the chili tasting raw and watery.
