What each ingredient does

Zucchini
Provides the bulk and moisture of the casserole once cooked and softened.
Yellow squash
Adds tender body and moisture to the casserole filling.
Corn muffin mix
Crumbled into the filling, it soaks up liquid and gives the casserole a starchy, bready texture.
Butter
Adds richness and carries the flavour of the onions and seasonings.
Cheddar cheese
Melts into the filling, adding fat, savoury flavour and a creamy binding.
Yellow onion
Sweetens and deepens the savoury base as it softens in butter.

The step that matters

Drain the squash well before mixing. Zucchini and summer squash release a lot of water when cooked. Excess liquid left in the filling makes the casserole soggy and can keep the crumb mixture from setting properly in the oven.
