Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the blondies together as they bake.
Butter
Adds fat for tenderness and rich flavor in the crumb.
Eggs
Bind the batter and set during baking to give the blondies their body.
Baking powder
Releases gas during baking so the blondies rise and become lighter.
White granulated sugar
Sweetens the batter and helps give the top a crisp, golden surface.
Brown sugar
Adds moisture and a caramel-like depth of flavor to the blondies.

The step that matters

Beat until fluffy. Beating butter, sugar and eggs traps air that helps the blondies rise and gives a lighter texture. Under-beating leaves a denser result.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, butter, sugar, egg, almond):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against flour, butter, sugar, egg, almond. Candidates are from the same food group and used in at least 100 recipes.
