  2. Add the chopped onion and sauté until it becomes soft and translucent.

  3. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

  4. Add the turmeric, paprika, cumin, coriander, and cayenne pepper to the pot and mix well to coat the onions and spices.

Add the vegetables

  1. Add the cubed potatoes and sliced carrots to the pot and stir to coat the vegetables with the spices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onion
Softens and sweetens as it cooks, forming the flavour base of the stew.
Potatoes
Hold their shape while absorbing spice and adding body and starch to the stew.
Cabbage
Becomes tender over slow cooking, adding bulk and mild sweetness to the stew.
Carrots
Add sweetness and firm texture that stays intact during the simmer.
Garlic and ginger
Release aromatic compounds when cooked briefly in oil, adding pungency and warmth.
Turmeric, paprika, and cumin
Bloom in hot oil to deepen colour and add earthy, warm aroma.

The step that matters

Cooking the spices in the onions. Frying the spices briefly in oil releases their fat-soluble aroma compounds. Adding them to liquid without this step leaves the stew tasting flat and dusty.
