Chicken Tagine with Lemon and Olives
serves 4Ingredients
Directions
Prepare
Combine lemon juice and chicken in a large zip-close plastic bag, seal, and marinate in the refrigerator for 30 minutes.
Remove chicken from the bag, discard the marinade, and pat the chicken dry with paper towels.
In a shallow bowl, combine the flour, salt, black pepper, red pepper, and turmeric.
Dredge the chicken in the flour mixture, lightly coating both sides, and set aside.
Brown the chicken
Heat the oil in a large, deep nonstick skillet over medium-high heat.
Add the chicken and cook for 3 minutes per side, or until lightly browned.
Remove the chicken from the pan and set aside.
Add the onion, ginger, and garlic to the pan and fry until tender.
Simmer and serve
Return the chicken to the pan, then add the broth, olives, lemon zest, and cinnamon stick.
Bring to a boil, then cover, reduce heat, and simmer for 1 hour or until the chicken is tender.
Discard the cinnamon stick and stir in the cilantro before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken breasts
- Provides the main protein, which becomes tender and moist during the gentle covered simmer.
- All-purpose flour
- Forms a light coating that helps the chicken brown and slightly thickens the cooking liquid.
- Olive oil
- Conducts heat in the skillet and helps the chicken brown evenly.
- Yellow onion
- Softens and sweetens as it cooks, building the base flavor of the sauce.
- Chicken broth
- Supplies the liquid that gently braises the chicken and carries the other flavors.
- Lemon zest
- Adds bright citrus aroma and sharpness that balances the rich braising liquid.
The step that matters
Browning the chicken before braising. Searing the floured chicken in hot oil triggers the Maillard reaction, which builds deep savory flavor and a golden crust. The flour coating helps this browning happen. Skipping or rushing this step leaves the finished sauce flat and pale.
