Ingredients

Directions

Marinate

  1. Combine the chicken pieces, minced garlic, berbere spice blend, paprika, cumin, coriander, turmeric, and salt in a mixing bowl.

  2. Mix well to coat the chicken with the spices.

  3. Allow the chicken to marinate for at least 30 minutes to enhance the flavors.

Cook

  1. Heat the olive oil in a large skillet or frying pan over medium-high heat.

  2. Add the chopped onion to the pan and sauté until it becomes translucent and slightly browned.

  3. Add the marinated chicken to the pan and spread it out in a single layer.

  4. Allow the chicken to cook undisturbed for a few minutes to develop a golden crust.

  5. Use a wooden spoon or spatula to stir and flip the chicken pieces, ensuring all sides are evenly cooked.

  6. Continue cooking until the chicken is cooked through and no longer pink in the center.

  7. Squeeze the lemon juice over the cooked chicken and stir well to incorporate.

  8. Remove the pan from heat and garnish with freshly chopped cilantro or parsley.

Serve

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken thighs
Provide the main protein, which stays juicy when cooked through over moderate heat.
Onion
Softens and browns in the oil, adding sweetness and a savory base to the dish.
Berbere spice blend
Supplies the dish's core warm, aromatic and pungent spicing.
Olive oil
Conducts heat for browning the chicken and carries the spice flavors.
Lemon juice
Adds acidity that brightens the spiced chicken at the end of cooking.

The step that matters

Developing the golden crust before stirring. Leaving the chicken undisturbed in a single layer lets its surface brown through the Maillard reaction. Stirring too early keeps the pieces steaming instead of browning, which mutes flavor.
