Egyptian Rice with Vermicelli

Time15–20 minutes

Ingredients

Directions

Prepare

  1. Heat the butter or olive oil in a medium-sized saucepan over medium heat.

  2. Add the vermicelli noodles to the saucepan and toast them until they turn golden brown, stirring constantly to prevent burning.

  3. Add the long-grain rice to the saucepan and stir to combine it with the noodles.

Cook the rice

  1. Pour in the water or vegetable broth and add salt to taste. Stir gently to distribute the ingredients evenly.

  2. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the saucepan with a lid.

  3. Allow the rice to simmer for about 15–20 minutes, or until the liquid is absorbed and the rice is tender.

  4. Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes to steam.

  5. Fluff the rice with a fork, mixing in the toasted vermicelli noodles evenly.

Serve

  1. Transfer the rice to a serving dish and garnish with fresh herbs, if desired.

  2. Serve the rice as a side dish alongside your favorite Egyptian main courses.

What each ingredient does

Vermicelli noodles
Toasting them in fat adds a nutty, golden aroma and flavour to the rice.
Long-grain rice
Forms the bulk of the dish, absorbing the liquid to become tender and fluffy.
Water or vegetable broth
Provides the liquid that the rice absorbs as it cooks through and softens.
Butter or olive oil
Carries the heat and coats the grains, adding richness and helping the noodles brown.

The step that matters

Toasting the vermicelli. Noodles toast quickly once they start to colour, and stirring constantly prevents them from scorching, which would make the dish taste bitter. Golden brown, not dark, gives the best nutty flavour.
