What each ingredient does

Pinto beans
Form the bulk of the dish and give it a hearty, starchy body.
Sausage
Adds fat, savory flavor and meaty texture as it renders and browns.
Bacon
Its rendered fat carries flavor into the onions and greens.
Collard greens
Add leafy texture and a slightly bitter, fresh contrast to the rich meats.
Yellow onions
Soften and turn sweet in the bacon fat, building a savory base.
Hard boiled eggs
Add creamy richness and a mild contrast in texture as a garnish.
