Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Provide structure and moisture, and help bind the batter together.
- Flour
- Gives the batter structure so the brownies hold their shape after baking.
- Butter
- Adds fat for a rich, tender texture and carries the chocolate flavor.
- Granulated sugar
- Adds sweetness and moisture, and helps form a shiny, crackly top.
- Cocoa
- Provides the main chocolate flavor and the dark color of the brownies.
The step that matters
Dissolving the sugar into the warm butter. Sugar dissolved into warm melted butter helps create a smooth, dense batter and a shiny, crackly top. Undissolved sugar grains can leave a gritty texture and a dull surface.
