Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Red potatoes
- Form the bulk of the salad and hold their shape when boiled and sliced.
- Bacon
- Adds savoury, smoky flavour and crisp texture, and its fat carries flavour into the sauce.
- Wheat flour
- Thickens the bacon fat into a smooth sauce that coats the potatoes.
- Apple cider vinegar
- Adds acidity that gives the sauce its characteristic tang and balances the fat.
- Sugar
- Adds a little sweetness to balance the sharpness of the vinegar and wine.
- Red onion
- Adds sharp, pungent flavour and crunch to the salad.
The step that matters
Cook the flour in the bacon fat without browning. Flour must be cooked briefly and smoothly in the fat so it thickens the sauce without lumps or a browned, toasted taste; heating too hard or too long can scorch it.
