Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Complete pancake mix
Provides the flour and leavening that give the pancakes their structure and rise.
Molasses
Adds sweetness, moisture and deep color, and browns the pancakes more readily.
Brewed coffee
Supplies liquid and a roasted depth that complements the warm spices.

The step that matters

Flipping the pancakes. Flip only once bubbles appear across the surface and the edges look dry. Bubbles show the leavening has set the batter enough to hold its shape, so flipping earlier can tear or deflate the pancake.

Swap the ginger

How well each one fits the dish's main ingredients (coffee, molasses, cinnamon, nutmeg):

  1. Clovefits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Gingerthe original

Fit is the average pairing score against coffee, molasses, cinnamon, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
