Ingredients

  • 4 cups soft-boiled red kidney beans
  • ½ cup raisins
  • 3 cups evaporated milk
  • 2 cups sweetened condensed milk
  • ½ tsp salt (or 1 pinch)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cinnamon sticks
  • 10 cloves
  • 1 sweet potato (batata), cubed small
  • Milk cookies

Directions

1

Blend cooked beans, including the water they cooked in, into a purée.

2

Strain beans into a pot in order to get rid of any skins.

3

Mix in sweetened condensed milk, evaporated milk, vanilla extract, salt, sugar, sweet potatoes, cinnamon sticks, and cloves.

4

Simmer over low heat until the sweet potatoes are fully cooked. Stir occasionally so that it will not stick on the bottom.

5

Add raisins and simmer for 10 minutes. You can also add the milk cookies if you want them to become soft.

6

Remove beans from heat.

7

If you want, you may remove the cinnamon sticks and cloves.

8

Serve beans in a bowl, and add milk cookies on top. You may serve warm or chilled.
