What each ingredient does

Boneless pork loin roast
Forms the main meat; the brine adds moisture and seasoning throughout the cut.
Salt
Seasons the meat and helps it hold moisture during the brine.
Honey
Adds sweetness and promotes browning on the outside of the roast.
Apple cider vinegar
Adds acidity that brightens the flavor of the brine and the pork.
Dijon mustard
Adds sharp flavor and helps the spice mixture adhere to the surface.
Light brown sugar
Adds sweetness and helps the spice crust brown in the oven.

The step that matters

Bake to 140°F internal temperature. Pork cooked past the target temperature dries out quickly, so checking the center with a probe thermometer rather than relying on time prevents an overcooked roast.
