Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Pork loin roast
- Lean meat that becomes tender and juicy when cooked gently to a safe internal temperature.
- Olive oil
- Conducts heat in the sauté pan and helps form a browned crust on the roast.
- Chicken broth
- Moist liquid that deglazes browned bits and forms the base of the cooking liquid for the sauce.
- Brown sugar
- Adds sweetness and helps the surface of the meat brown and caramelize.
- Honey
- Adds sweetness and gloss to the sauce, and helps it caramelize slightly as it reduces.
- All-purpose flour
- Thickens the butter-based sauce as it cooks into a roux.
The step that matters
Cook the pork to 145°F and stop there. Pork cooked past the target temperature loses moisture and turns dry and firm, while the fat and muscle proteins need to reach the set point to be safely done. Checking with a probe thermometer rather than relying on time keeps the roast juicy.
Swap the garlic
How well each one fits the dish's main ingredients (pork, pepper, sugar, chicken, red wine, sauce, olive):
