Ingredients

Directions

Prepare the base

  1. Heat the vegetable oil in a large pot over medium heat.

  2. Add the chopped onion and minced garlic.

  3. Sauté until the onion is soft and translucent.

  4. Add the diced sweet potatoes, carrot, and green bell pepper to the pot. Stir well to combine with the onions and garlic.

Spice and simmer

  1. Sprinkle the curry powder and cayenne pepper (if using) over the vegetables, and season with salt and black pepper to taste. Stir again to coat the vegetables with the spices.

  2. Pour in the vegetable broth or water.

  3. Bring the mixture to a boil.

  4. Reduce the heat to low, cover the pot, and let the stew simmer for about 15–20 minutes, or until the sweet potatoes are tender and cooked through. Stir occasionally during cooking to prevent sticking and to ensure even cooking of the vegetables.

Finish and serve

  1. Add the diced tomatoes to the stew. Stir well and let it simmer for an additional 5 minutes to allow the flavors to meld together.

  2. Taste and adjust the seasoning as needed, adding more salt or spices according to your preference.

  3. Remove the pot from the heat.

  4. Let the ikijumba rest for a few minutes before serving.

  5. Garnish with chopped fresh parsley or cilantro before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Form the bulk of the stew and turn tender and starchy as they simmer.
Onion
Builds a sweet, savoury base as it softens and turns translucent.
Tomatoes
Add acidity and moisture that help the stew's flavour come together.
Curry powder
Contributes warm aromatic spice that flavours the vegetables and broth.

The step that matters

Sautéing the onion and garlic until soft and translucent. Cooking the onion slowly drives off moisture and develops sweetness, while garlic turns mellow. Rushing this step leaves a raw, sharp base that the spices cannot mellow.
