Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Starch that mashes into a firm, malleable base that can be pressed into shape.
Soy sauce or yeast extract
Adds savoury, umami flavour that gives the mixture a cheese-like taste.
Margarine or rapeseed oil
Adds fat, which softens the texture and makes the mash smoother.
Corn flour
Thickens the mash so it holds its shape when pressed.

The step that matters

Boil potatoes until they are not quite done. Potatoes that are overcooked absorb too much water and turn watery and slack, so the mash will not hold a firm shape when pressed. Slightly underdone potatoes are drier and starchier, giving a firmer base.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (potato, sauce, corn, garlic, thyme, rosemary, cumin):

  1. Oreganofits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. Celerythe original

Fit is the average pairing score against potato, sauce, corn, garlic, thyme, rosemary, cumin. Candidates are from the same food group and used in at least 100 recipes.
