Ingredients

Directions

Marinate

  1. Trim and cut the chicken into small cubes.

  2. If you prefer chicken on the bone, cut long thin slices laterally into the chicken.

  3. In a big bowl combine the tandoori powder, yogurt, lemon juice, and chicken.

  4. Massage the mixture well with your hands so that all the chicken is evenly coated with the tandoori powder.

  5. Cover and set aside for at least ½ an hour.

Make the sauce

  1. Heat a large saucepan or frying pan until evenly hot.

  2. Melt 2 tablespoons of butter in the pan until frothy.

  3. Add the onions and cinnamon to the pan and fry lightly.

  4. When the onions are soft and starting to brown, stir in the crushed garlic and ginger.

  5. Add the turmeric, chili, and coriander, and sauté over medium heat.

Cook and finish

  1. Add the chicken and sauté, stirring constantly, until the chicken has turned white. Do not overcook the chicken.

  2. Mix in the tomato paste.

  3. Add the cream and heat through.

  4. After stirring, you may add additional tandoori masala, about 3–5 tablespoons.

  5. Cover and simmer for just over 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the protein; cooking it gently keeps the meat tender and juicy.
Yoghurt
Its acidity and proteins tenderise the chicken and help the spice coating cling.
Butter
Carries the spices and adds richness and a rounded flavour to the sauce.
Onion
Softens and browns as it cooks, adding sweetness and body to the sauce.
Tomato paste
Concentrates tomato flavour, adds acidity and deepens the colour of the sauce.
Full cream
Adds fat and smoothness, mellowing the spices and giving the sauce a silky texture.

The step that matters

Do not overcook the chicken. Chicken turns white as it cooks; once it is firm and fully white, further cooking dries out the meat, and the later simmer continues to cook it.

Swap the cinnamon

The recipe marks cinnamon as optional. How well each one fits the dish's main ingredients (chicken, lemon, butter, onion, clove, garlic, ginger):

  1. Thymefits better
  2. Cardamomfits better
  3. Turmericfits about as well
  4. Cinnamonthe original

Fit is the average pairing score against chicken, lemon, butter, onion, clove, garlic, ginger. Candidates are from the same food group and used in at least 100 recipes.
