Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked whites add lift and an airy, tender structure to the batter.
Flour
Forms the batter's body and, once set, the chewy, torn-pancake structure.
Milk
Hydrates the flour and keeps the batter loose and moist as it cooks.
Butter or margarine
Fat for the pan that promotes browning and a rich flavour on the pancake surface.
Raisins
Add pockets of concentrated sweetness and chew throughout the pancake.

The step that matters

Cook until the pancake gets solid at the bottom. The base must set and brown before turning; flipping too early leaves a wet, collapsed pancake because the batter's proteins and starch have not yet firmed up.

Swap the raisin

How well each one fits the dish's main ingredients (egg, milk, sugar, flour, butter):

  1. Vanillafits about as well
  2. Raisinthe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against egg, milk, sugar, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
