Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almond meal
Provides fat and nutty flavour while adding body to the sponge.
Cake flour
Gives the sponge structure once the batter is set by heat.
Egg whites
Whipped into foam, they trap air that lifts and sets the sponge.
Superfine sugar
Stabilises the whipped whites and adds sweetness and browning.

The step that matters

Fold the almond mixture into the egg whites. Folding gently keeps the air bubbles in the whites intact. Stirring or overmixing deflates the foam, so the sponge bakes flat and dense.
