Ingredients

  • 2 cups grated cassava
  • 1 egg , lightly beaten
  • 1 onion , finely chopped
  • 2 green chiles (optional, for heat), finely chopped
  • 2 tablespoons cornmeal
  • Salt , to taste
  • Vegetable oil , for frying

Directions

1

In a mixing bowl, combine the grated cassava, beaten egg, finely chopped onion, and finely chopped green chilies (if using).

2

Add the cornmeal to the mixture and mix well until everything is evenly combined.

3

Season the mixture with salt to taste. Adjust the seasoning according to your preference.

4

In a frying pan, heat vegetable oil over medium-high heat.

5

Take spoonfuls of the cassava mixture and carefully drop them into the hot oil. Flatten the fritters slightly with the back of the spoon.

6

Fry the fritters until they are golden brown and crispy on both sides. Use a slotted spoon to remove them from the oil and place them on paper towels to drain any excess oil.

7

Repeat the frying process with the remaining cassava mixture.

8

Allow the fritters to cool slightly before serving.
