Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White rice
Forms the bulk of the dish and absorbs the broth as it cooks to a fluffy texture.
Chicken broth
Supplies the cooking liquid that the rice absorbs, carrying flavor through the grains.
Ancho enchilada sauce
Adds chile flavor and color to the cooking liquid, tinting the rice.
Garlic
Adds aromatic pungency that mellows as it cooks in the hot oil.
Onion
Adds savory sweetness as it softens in the hot oil.

The step that matters

Toasting the rice until it begins to brown. Browning the dry grains in oil adds toasted, nutty flavor and helps them stay separate. Stopping too early leaves a flat taste, and burning gives bitterness.

How well each one fits the dish's main ingredients (rice, sauce, chicken, garlic, onion):

  2. Capersfits better
