Explore the science
What each ingredient does
- Basmati rice
- Forms the main body of the dish, with its texture set by cooking in boiling water.
- Boiling water
- Hydrates the grains so they soften and swell as they cook.
The step that matters
Let stand and drain. Resting lets residual heat finish absorbing water evenly, and draining removes excess liquid so the grains stay separate rather than sticky.
