Mishti Doi

Ingredients

Directions

Make the caramel milk

  1. Place a heavy-bottomed pan on the heat and add milk, warming it on medium heat.

  2. Set aside one-third of the sugar and add the remaining sugar to the milk.

  3. Reduce the heat and continue heating the milk until it reduces by half, then remove from heat and set aside.

  4. Add the remaining sugar to another pan over medium heat, allowing it to warm and melt, browning and caramelizing gradually.

  5. When the caramelized sugar reaches a golden bubbly mixture, add a tablespoon of water, then pour the mixture into the heavy-bottomed pan with milk and stir well until combined.

Set the doi

  1. Once the milk cools, add the whisked yogurt, stir well, and pour the mixture into earthen pots.

  2. Let the doi set in a warm place for a few hours; once set, refrigerate and serve chilled.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: 2-nonenal (fatty, green).

Milk and sugar barely smell alike, yet cooks put them together in 77,875 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole milk
Provides the body and richness that the set doi is built on.
Sugar
Sweetens the milk and, when caramelized, adds colour and a deeper flavour.
Yoghurt
Carries live cultures that thicken and sour the milk as it sets.

The step that matters

Reducing the milk by half. Simmering milk slowly concentrates its milk solids and sugar, giving the finished doi a denser, creamier set. Reducing too fast or too far can scorch the milk on the base of the pan.
