Ingredients

Directions

Make the base

  1. In a pot, heat the vegetable oil over medium heat.

  2. Add the finely chopped onion and minced garlic to the hot oil.

  3. Sauté until the onions become translucent and aromatic.

  4. Toss in the diced red and green bell peppers, and the chopped tomato.

  5. Cook for a few minutes until the vegetables soften and release their flavors.

  6. Add the curry powder, ground cumin, ground coriander, ground turmeric, and ground paprika to the pot.

  7. Stir well to coat the vegetables with the spices.

Simmer the stew

  1. Carefully pour in the coconut milk.

  2. Stir the mixture until the spices are well combined with the coconut milk.

  3. Add the cubed pumpkin to the pot.

  4. Gently mix it with the coconut milk and spice mixture.

  5. Season the stew with a pinch of salt and ground black pepper, to taste.

  6. Cover the pot and let the stew simmer over low heat for about 15–20 minutes, or until the pumpkin becomes tender and fully cooked.

  7. Stir occasionally to prevent the stew from sticking to the bottom of the pot.

  8. Remove the pot from the heat.

Serve

  1. Serve hot, garnished with freshly chopped cilantro or parsley for added freshness and color.

What each ingredient does

Pumpkin
Provides the main bulk and sweet, tender body once simmered until soft.
Coconut milk
Adds richness and moisture, mellowing the spices into a creamy sauce.
Onion
Builds the savoury base as it softens and turns translucent in the oil.
Bell peppers
Contribute soft texture and mild sweetness as they cook down into the stew.
Curry powder
Supplies the warm, aromatic spice profile that defines the stew's flavour.
Tomato
Adds acidity and body, helping the vegetables break down into the sauce.

The step that matters

Simmering the pumpkin until tender. Pumpkin must be covered and simmered gently over low heat until fully soft; stirring prevents scorching on the base while the cubes cook through evenly.
