Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Button mushrooms
Provide the main body and earthy flavour of the sauce.
Dry white wine
Adds acidity and aroma as it reduces, concentrating the flavour.
Crème fraîche
Adds richness and body, giving the sauce a smooth, thick texture.
Butter
Adds fat and flavour for cooking the onion and mushrooms.

The step that matters

Cook the mushrooms until soft but not releasing their juices. Cooking mushrooms over steady heat drives off their water so they brown and concentrate flavour; if they release juices too early they steam and turn grey and watery, diluting the sauce.
