Directions

Prepare the soup base

  1. Heat the vegetable oil in a saucepan over medium heat.

  2. Add the chopped onions and minced garlic, and sauté until the onions become translucent and slightly golden.

  3. Add sliced bell peppers and chopped tomatoes to the saucepan.

  4. Cook for a few minutes until the vegetables start to soften.

  5. Add the chicken or vegetable broth to the saucepan with the vegetables.

  6. Stir in the ground cayenne pepper, paprika, cumin, and coriander.

  7. Season with salt to taste.

  8. Bring the mixture to a gentle simmer.

Add the eggs and serve

  1. In a separate bowl, crack the eggs and whisk them until well-beaten. Set aside.

  2. Slowly pour the beaten eggs into the simmering soup, stirring gently with a wooden spoon or spatula in one direction.

  3. Continue cooking the soup for about 3–4 minutes, allowing the egg to cook and thicken the soup slightly.

  4. Taste the soup and adjust the seasoning if needed. Add more salt or spices according to your preference.

  5. Once the soup is ready, remove it from the heat.

  6. Serve hot, garnished with fresh cilantro or parsley if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Cook into strands that thicken the broth and add body.
Bell peppers
Add sweetness, color, and a soft, vegetal body to the soup.
Tomatoes
Add acidity and moisture that build the base of the soup.
Onion
Adds savory sweetness as it softens and turns golden.
Cayenne pepper
Provides heat that gives the soup its pepper flavor.

The step that matters

Adding the beaten eggs to the simmering soup. If the soup boils hard or the eggs are stirred too vigorously, they can scramble into clumps instead of forming soft ribbons. A gentle simmer and slow pour let the egg set in thin strands that thicken the broth.
