What each ingredient does

Pork loin roast
Slow cooking in the salsa keeps the lean meat moist enough to shred into the filling.
Medium chunky salsa and mild chunky salsa
Supply most of the cooking liquid and tomato acidity that flavours the pork and the sauce.
Diced green chiles
Add mild heat and a green, roasted flavour to the sauce.
Monterey jack cheese
Melts into a creamy layer that binds the filling and adds richness.
Flour tortillas
Wrap that holds the filling; their gluten lets them roll without tearing.
Onion
Cooked until tender, it adds sweetness and a savoury aromatic base.

The step that matters

Cook and stir for 15 minutes to thicken the mixture.. Simmering reduces the water in the sauce so it thickens and clings to the tortilla instead of making it soggy. Stirring keeps the sauce from sticking and scorching on the bottom of the pan.
