Potato, Courgette, and Cavelo Nero Pancakes

Time3–4 minutes per side

Ingredients

Directions

Prepare the vegetables

  1. Coarsely grate the courgette in a food processor or with the coarse side of a cheese grater.

  2. Sprinkle the grated courgette with salt and let sit for about 15 minutes. Then squeeze through a fine mesh or cheesecloth to remove moisture.

  3. Finely grate the potatoes with the fine side of a cheese grater, or coarsely shred them in a food processor and then lightly chop with a knife. Squeeze out moisture with a cheesecloth or fine mesh.

  4. Remove the stem from the cavolo nero and finely slice it.

Make and cook the pancakes

  1. Combine the grated courgette, grated potato, sliced cavolo nero, sliced spring onions, and chopped dill in a bowl. Add the eggs, flour, and pepper, then mix with a spoon.

  2. Heat a pan over medium heat and add a few tablespoons of oil. Drop a spoonful of batter into the pan and flatten with a spatula to about 4 inches in diameter. Cook for 3–4 minutes, flip, and cook another 3–4 minutes, adding more oil as needed.

  3. Drain the cooked pancakes on paper towels to remove excess oil.

Serve

  1. Serve the pancakes with sour cream, applesauce, or ketchup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Starch that binds the batter and crisps to a golden exterior when fried.
Eggs
Bind the grated vegetables together so the pancakes hold their shape.
All-purpose flour
Absorbs leftover moisture and helps the batter hold together while frying.
Courgette (zucchini)
Provides the main bulk and moisture, which must be squeezed out first.

The step that matters

Squeezing out the moisture. Grated courgette and potato release a lot of water. If it is not squeezed out, the batter becomes loose, the pancakes steam instead of browning, and they may fall apart in the pan.

Swap the onion

How well each one fits the dish's main ingredients (potato, kale, dill, egg, flour, pepper):
